Here's the story of this innovative idea of matching bacon and chocolate with popping candy.
One day while thinking of the great times he had with his family on their summer trips to the family lake house in Minnesota. He thought of the chocolate covered bacon he had at the fairs when he was younger. Always being a fan of bacon and chocolate, he thought he would try to recreate the memories of those trips. A few years ago he went into our chocolate kitchen and started cooking the bacon, when he was splattered by the bacon grease cooking in the pan. Being innovative as he is, a light went off in his head, popping candy would give a great texture and give the bacon a life like texture in your mouth, as if it was sizzling in your mouth. With this new found idea, he started his path to finding the perfect blend of sea salt, bacon and chocolate with the perfect mixture of sizzling. After months of experimenting, the "Sizzling Bacon Bar" was born! For a many years, this creation was made in very small batches and only offered to a small clientele in Orange County, Ca, until 2008 when he was fortunate enough to take it on a larger scale and introduced it to the public at the San Francisco Chocolate Salon, where he won multiple awards.
So even though Christopher didn't come up with the bacon covered chocolate idea, he can be given credit for making it better with popping candy for the "Sizzling Effect".

Giving credit to those who deserve it. We get asked all the time how we came up with the idea of covering bacon with chocolate.
We
cannot claim that we invented or thought of the idea of chocolate
covered bacon, nor can any chocolatier that started making this
combination in recent years . We give the credit to those who
really deserve it, the ones that came up with this out of the box
idea, mid-west fair vendors, who started doing this long before any
chocolatier ever thought of it. As a matter of fact, it was also being
done in the south, which they took it a step further. They actually
took the bacon and rolled it in brown sugar and then baked it, in turn
making it really crispy and sweet, then drizzling chocolate over it.
They called this "piggy candy", which our chef first heard about this
idea in 2003. But we do claim of making it better and giving you a
better experience with the use of better bacon, salt, and the best
chocolate we can find, plus we give you the texture from using popping
candy for the sizzling effect.
